Hello Glam Dolls,
Today is my first ever Vegan "What I
Eat In A Day” post. I have been vegan for awhile now, and I was
vegetarian for years before hand. I love this lifestyle, and I want
to show you that eating vegan doesn't have to be difficult or overly
expensive. If you have any questions concerning veganism, or about
the food I am eating, please let me know, and I will do my best to
try and answer them for you.
In the morning as soon as I wake up, I
have a big glass of lemon water. I drink it throughout the day as
well. I do not drink soda, or anything like that. If I have juice, I
squeeze it myself. I usually prefer to just eat the fruit instead.
I find that where I drink a lot of
lemon water it pays off to buy the Santa Cruz Organic 100% lemon juice. It is just pure lemon. This bottle lasts me a little over a
week, and it is $5.00.
Breakfast: Vegan Silver Hills
rappleberry bagel with PC Organics Peanut Butter, and one cut up
banana.
PC is a brand sold in Canada. This
peanut butter is my favorite, and it doesn't have any added sugar or
oil.
Snack: I ate breakfast around 8:30am.
Around 11:00am I got hungry, so I decided to make my favorite snack.
Frozen edamame. All I do is put some in a bowl and heat them up in
the microwave. They are such an amazing source of protein and they
taste great. I sprinkle a little bit of sea salt on them when they
are still hot. So satisfying!
Lunch: I usually try to have a salad
somewhere during the day. Today's salad was really simple. I cut up
one whole head of romaine lettuce and topped it with chopped red
onion, tomato, and hemp seeds. I had a baked sweet potato on the
side.
I don't use pre-made dressing. I
usually just use lemon and pepper, which is what I did today.
Today during lunch I planned out some
blog posts in the new planner I got. I love this planner. It's so
cute!
While I cook dinner I like to have a
tea. I find it very soothing. Tonight I had the Tea Squared kombucha
detox tea.
Dinner: Tonight for dinner I decided to
make Vegbethany's “Kabocha Squash Soup.” I didn't use the exact
ingredients, but it was similar.
All I did was cut up one medium size
squash and put it in a pot with some water. I added fresh grated
ginger, sea salt, cumin, one large onion, and green onion in with the
squash and boiled it all together until the squash was cooked.
When it is done, add it to a blender, and blend until smooth.
I made two pieces of vegan sourdough
toast with avocado, and steamed spinach to go with it.
Snack: A few hours after dinner I cut
up a large apple and ate it with some sunflower seed butter. I
sprinkled cinnamon on top of it.
